You might regret removing the thermostat on the cooler days. I had a 160 in a 72 Ranchero one time and the heater never would get warm on cold days. It seamed to rob a little power by staying cold. It might be different on these new fuel injected engines, but that's my experience. I might drop the temp on your thermostat before I would remove it all together.
On a side note, I installed the Stant thermostat and it no longer is over heating. It is running warmer than it used to, but its not over half way at its highest and its not overheating. So put me on the list of people who won't use Murray thermostats in the future.
