I have a 03 LS v8. It has about 95k miles.

In a few weeks i have a vacation and was wanting to do some things to the LS before it needs it.

I have already done the brakes & rotors all over, New tires, rear arm links, oil change and a new intake.

Only have had the car for about a month.

I was thinking about the fuel filter & thermostat. Anything else i should potentially look at.

The car can be down the whole week i drive GTP daily.

Will

Coolant flush.
Transmission fluid exchange.
Differential oil change.
Inspect CV boots.
Check/change engine air filter.
Check/change cabin air filter.
Change seat air filters.
Inspect belt.
Inspect hoses, plastic cooling system parts, including degas tank.

Flush the brake fluid? When you look at the plugs make sure that there is no oil in the plug wells. If there is then change the valve cover gaskets.

What is the change interval for the differential? I have passed 100K and didnt want to miss anything.

Fuel filter is another neglected item.

That seems to be a matter of opinion. I think that Ford is fine with "never." Personally, I think that somewhere between 100K and 150K is about right.

Ok i changed the air filter, cabin filter, seat filter, new rotors and brakes and fluid. New tires and alignment.

I ordered a new thermostat. Should i go ahead and get a new housing, hoses and a degas bottle?

Going to have the plugs and diff fluid changed at 100k.

Yes.

Don't know what a "sear" filter is but if you have heated and cooled seats there is a filter accessible under the two front seats that should be cleaned or replaced occasionally.

2¢ on the situation: leave it alone until you get home. More than once I have seen someone do a ton of maintenance before going on a long trip, just to break down halfway through...myself included. You never know when you are going to let loose a "blood clot" from flushing or replacing something. There is always the potential that you will break something while working on it, too. I try to do all of the bigger stuff when I know the vehicle is going to be running around my safety-net for a thousand miles or so. That way everything gets broken back in and that confidence is built back up.

Oh i wil be at home with it. Not going anywhere at all. Just took some time off. Im just going to drive my GTP while the LS is down.

On a side note, where can i find he coolant hoses?

on my old truck the fan belt was looking bad. so before going on a trip i stopped at the auto store and put a new one on. 60 miles out of town it tossed the belt. luckily i had the old one still. stopped in the next town and got another new one. this time i just put the new one behind the seat. i sold the truck with the old belt still on it and new one behind the seat.
