When going to a 160 degree T-Stat, what should I get?
um. A 160 Degree Thermostat? That would be a good start.

JDM makes a 170 degree thermostat, I think only Hypertech has the 160 degree one. I personally use a Napa 180 degree in all my Mark VIII's. Remember it won't do anything unless you get the fan to turn on earlier.

I get 27.5 on the highway with 4.10's and a 3500 converter.
I would love to know how in the world you get that type of mileage when both my 95 and my pals 94 (all stock) only do around 22 mpg on the freeway!!!!!
I'm lucky to get 16 mpg in town!!!

My friends vette gets about 10mpg at 130mph according to his computer.

That's actually kinda bad, my ETC will do 12mpg pegged north of 150. Not that I'd ever do that on a public road.
Turborich, what kind of speeds are you all going getting 22 highway? A lot of changes in speed? Out here on the highway it's generally light traffic and fairly flat, cruising at 75 I'm disappointed with less than 30.
That average is excellent.
I think your decrease in mileage is due to the fact the exhaust was just done and your foot just gained weight.
When was the last time you changed your fuel filter? I know that on my 95 (that my father now has), when I changed the filter a few months ago, the car wasn't as sluggish and picked up a couple of MPG from what he said.
