Overheat or Running HOT

The one I used looked similar to the one on the left.

The problem likely lies therein. The cheap parts store tstats both restrict flow through the cooling circuit (radiator) and fail to fully block off the bypass circuit (which allows hot coolant to re-enter the engine).
 
Exactly what thermostat did you install? Did it look like the one on the left or the one on the right?

If you were talking to me, that's the exact one I put in, replacing the OEM one. Looked exactly the same and works great so far, going on several weeks.

Input from you is good too. I didn't know if your a poster or a do'er. I know racecougar has first hand on this. This comes up as 188 degree unit correct?

I couldn't tell you if that is the correct part number. I've used the Motorcraft one that Lonnie buys/resells as his "high flow 180" (pictured above), but I don't have the part number for it. The Reische 170 tstat is another quality option.

pretty sure Rock Auto sells this as a M8 part...I bought one recently, it's still sitting in the unopened box from them since I decided 190-ish is 'NORMAL'
