Yet Another Cooling System Question...

2004 V8 Premium Sport

Entire cooling system has been replaced over the past 3 years: Degas 9/15, T-Stat 12/15, Radiator 12/16, Upper and lower hoses, 12/15. Most recently 9N499, crosspipe, water pump, and throttle body hoses (I won't go into the harmonic balancer issue.) Of course, I bleed the system 3 times and opened bleed valve 6-8 times when hot to ensure all air is out. I also just installed a new degas cap that fits much more snuggly that "old" one which is only 3 years old. Tighten it down to one "click".

Now, this morning is indicative of what I have seen a few times. Taking spawn to school (2-3 mile drive) the temp gets to 207 and stays. I pulled over after dropping him off and while sitting idling for 6-8 mins, the temp climbs to 221. I start heading back home and within 3 mins the temp drops to 219 to 214 to 207 to 203, then back up to 210 to 215. This isn't freeway driving, it is city streets at 40-45 with several signals.

I don't see any coolant loss other than the amount from opening the bleeder.

Where do I look next? I hear the fan but not going hard. The A/C works well while sitting idling. The Gen 2 fan only has the two electrical connectors on the driver's side, right?

Am I just obsessing? I have seen where others have their coolant temp in the 200-210 range and even under 200.
 
I think that 220ish at idle is okay, but it usually is very hot here.
2003-2004 have two connectors, 2005-2006 have one.

Ok, just took it out to run a couple errands and stayed at 203-207 then up to 212 after the third stop.

I must be obsessing....
