I have 245/35/20 Nankang tires on my LS. It says max PSI 51 but that sounds assinine for a 35 series tire. What is the lowest PSI you guys would recommend to get somewhat of the luxury feel back? What tire pressure do you guys ride on who have 20's?

Max is just that, the maximum pressure you could inflate them to, not the recommended pressure. Use the recommended pressure on the door sticker.
 
The door sticker refers to the stock tires. I also understand the max tire pressure, it just seems extremely high even for a max.
 
In order for the sidewalls to be structuallny strong enough to drive on you will running close to max on a 35 series tire, at least 40-45 psi.
 
I usually keep mine in between 35-40 PSI on my 35 series..sometimes i cant even tell i have aftermarket rims
