Just wondering what brand should I go with and what brand do you guys have in your LS8?

another vote for motorcraft. I changed mine not too long ago, and used motorcraft.

Use whatever came stock.

OEM...the plug the LS was design with.

Change brands if you need to change temperature for nitrous and /or supercharger/turbocharger.

Come On! Where is the guy who is going to post and start a big discussion (argument) about fancy plugs? If everyone is just going to agree it doesn't make things very interesting.
