I have been hearing I need to have both front tires in the air when removing front shocks. Why is this that I can't have just one side of the car jacked up and do one at a time?
 
I suppose you could if you disconnected the anti-sway bar before you jacked it up. Just make sure it is really stable with just one side up. I feel like it is usually more stable with it level (both sides up), and remember with one side down, that side will have give to it (will move up or down), whereas if it were on jack stands, it wouldn't move.

I guess this is all for nothing now, since I already took the passenger front shock out so to replace the upper control arm. Would you suggest I jack the other side up and use jack stands still or should I just reinstall the control arm and shock now that it's already out?
Will I damage my LS if I don't place the driver side on Jack Stands before reinstalling all the suspension components?

Is this elevating the front end suggestion so not to have the alignment messed up?
 
No. My concern was for you not damaging yourself.
I see...I do have Jack Stand under the main cross frame I hate that it's aluminum though and my Jack doesn't get the car high enough so to fit a piece of wood on the Jack Stand so that if the Jack would ever give way it wouldn't crack the aluminum... price I have to pay for a luxury sport
