How can I know if my coolant is full

So I put coolant in my car, probably around 2 gallons. The coolant in the degas bottle has not went down for about 2 Days. I think it is full but it is supposed to take right under 3 gallons

It's quite possible that you didn't drain all three out to begin with. Anyway, it's very important to fill and bleed the system exactly by the book. What year is your LS, and which engine?

If you've driven the car significantly, and there's been no change in the level in the bottle and no sign of overheating, it's at least a good guess that you simply didn't drain all the coolant out and DID put back all that was necessary.
