I have a 2000 ls v-8 with the engine light on the car overheated and fixed that problem and now the sensor shows up. Do I need to replace the sensor, and if so where is it located?

P1299 is just an indication that failsafe cooling was triggered due to the engine overheating. It is not a code that says that any sensor or anything else needs to be replaced. It's just letting you know that it happened.

the engine light is on now, could there be another code that I missed?

you would have to get it checked to know that.... if its the same, delete it, if it comes back, you still have a problem
