the label is missing under the hood can someone please tell me the freon capacity on a 2000 ls v8

Doesn't matter, use a gauge set to do it right. You want to charge the system based on the high (primarily) and low side pressure. As far as what you should buy get 3-lbs of freon. If your AC system is good you are probably going to be using somewhere around 2-lbs. You can always return any unopened cans.
Also, you should probably pick up a small can of oil charge if you are charging a leaky system you fixed. If you replaced the compressor you should add whatever the compressor calls for, which is probably around 6-7 ounces.
You should also evacuate the system and replace the drier if you plan to make it last.
Honestly, unless you are just charging the system without really trying to fix it, I would just take it to a shop that has the pumps and gauges. Paying them the extra they want will be worth it.
However, if you have your own hi/lo gauge set and a vacuum pump, then you are all set.
MAKE SURE YOU ONLY CHARGE FROM THE LOW SIDE!!! This is not a suggestion, unless you like causing serious damage to yourself from exploding cans.
On a new compressor, it would be a good idea to spin the pulley over a dozen times or so to make sure you don't start it full of oil. It can blow out the seals if you do. Just make sure you spin it in the direction the belt would. Spinning it backwards defeats the whole purpose and almost guarantees it will start full of oil.
After spending years fighting with Ford's craptacular FS10 "Black Death" compressor, I actually bought all the tools and saved money in the process. Hated those damn compressors. They were the epitome of POS. But I digress. Fortunately the LS has a decent nippendenso one

i actually own my own shop and i have a top of the line robinair a/c machine and i still also have the good ole hoses/gauges set
im just wantin to know the correct capacity as a starting point

Well, if that was in your first post I could have saved a bunch of typing. But anyways, good to know.
And what Joegr said anyways. I only have a Gen2 so still no clue what a Gen1 is. Since they are both DATC with similar setups I imagine they would be relatively close.
