Is there a dash kit for the middle thats for the radio, ash tray, air control, ect. that is not a vinyl sticker kit? I want to pop out old stuff pop in new stuff. I want it to perfectly match the rest of the wood thats already there.

All new plastic pieces? Not that I know of. If there was such a kit, I would guess that the price would be horrendous.

Depending on Gen, 1st gen is not real wood, 2nd gen is real American walnut.

I did not have to match with a Sport LS just cover up the satin nickel plastic, and that is real burl wood stick on.

Is it a hard plastic thats sticks on? I was messing with it last night and Im thinking of just painting high gloss black to match Black exterior paint. I just dont want to mess with vinyl that needs heated to strech smooth, then if you strech too far the wood pattern gets distorted. Plus im not that good with vinyl, I usually get air bubbles.

The wood dash kits about 1/16th of an inch thick.
It's no problem installing without bubbles.

You can take the parts off and reposition them a few times if need be since the glue sets better overnight.

No one makes a molded dash kit for the Lincoln LS. All dash kits are the stick on type. Now, if you have a lot of money and want the ultimate custom dash kit you can send off your pieces to American Stitches and they'll cover the pieces in any color or woodgrain type you want. You can see the picture below of the dash piece they matched to a steering wheel:

I had the custom Carbon Fiber steering wheel I sold to a member here done by American Stitches. It cost around $400 but no one else had one like it. I'd highly recommend them if you wanted to really make your LS stand out. Be prepared to shell out some bucks but they are well worth it IMHO.

Here is another example of the dash pieces and matching steering wheel from American Stitches:
