Probably going to finally get around to installing these. My question is whether actually doing a corner balance is worth it versus just counting how many turns you put on each shock?

I know that the "Proper" way is to do a full corner balance with my amount of weight put in the drivers seat but I lack the scales to do that (and probably the patience).

What I was thinking of doing was using number of turns on the shock and just keeping those even. For instance, I would pre-load the spring with 2 full turns and then start with 5 turns out on the lower mount. How close has this method been for actually getting a balanced setup on the car?

Do a rough balance first because the crown of the roads you run are inconsistent anyway and you will be chasing the proper setup forever. Then maybe you can play with tire pressures after that. Remember, race cars have different setups for different tracks.
