I was messing around on the internet and found a couple of wikipedia articles on the LS and the 3.9L V8.

I didn't know the Aston Martin Vantage V8 had the AJ-V8 motor.

As far as Jaguars go, I wonder if you could use this ECU along with a XJR supercharged motor.

Do a search. Engine swaps are pretty much NOT cost-effective these days with all the integrated electronics. You would need more than the engine, trans and pcm. There are wiring harness', modules and a host of other things to make it work. You could buy a Jaguar S-Type R for less.
