03 LS V8 - Spark retard table vs Knock sensors

Hi guys, looking to see if anyone has any info on how the knock sensors voltage readings are calculated in determining spark retard. I can see the voltage coming from the sensors, but I'm curious on how the table then determines how much spark to retard. Anyone have any insight on this?
