What the the functions of the electrical connections on the rear view mirror?

Usually, you have continuous battery power, switched battery power, a reverse signal, ground, and a dimming output for the side view mirrors.

Excuse my ignorance, but I need to cut all of the wires going to the rear view mirror. Will this cause me any problems?

Well, the auto dim on the rear view mirror will stop.
You need to cut them separately and tape off the end of each to make sure that none get shorted out.
Why not just unplug the connectors?

There are latches that need to be pressed just the right way to release them, then it is easy. Way better than cutting wires...
