Strange pondering about K&N Filters

I am sure I'm not the only one who has thought about this, but how exactly does a K&N Filter help at wOT? (Wide Open Throttle)

It is my understanding that at WOT, most (if not all) factory engine management computers rely on an ignition/fuel delivery table - much like the Speed Density Systems of EEC-IV (III??) computers). The car's computer ignores most "realtime sensors", like MAF, O² Sensors, and a plethora of other sensors that the computer relies on under any other throttle condition to make it's necessary calculations in order to feed the motor just the right ammount of fuel/timing.

If that is the case, and the computer goes to reading a preprogrammed map, I am sure that map is calibrated for the FACTORY paper type Air Filter, not a High Flow Filter, and will deliver fuel as such.

Wouldnt that extra air the computer isn't expecting make the motor run lean?
