Is there anyway to replace this with the electronic throttle controller ? I have a 2000 ls v8 sport

Why?

Throttle by wire is annoying as all hell.

+1^^^

You should be happy that you do not have it!!

not easily.

The newer throttle-by-wire is available on the Gen2s - but controlled by the newer PCM. This PCM is part of the upgraded CAN network - meaning that most of the systems (I believe there are 7 of them - FEM, REM, Gauge Cluster, TC/ATC, DDM, ...etc) were upgrade to CAN interfaces. The Gen2 PCM is also expecting VVT, ...etc so there may be different engine sensors, ...etc that I haven't identified.
