I'm considering a Mark VII as my next car and I had a few questions...

1.) would everything that fits a 86-93 Mustang GT fit a Mark VII(heads, intake, etc.)
2.) what rear ends do Mark VII's come with? 2.73? 3.08?

not sure about #2 but I can answer #1

The 5.0 H.O. motor is already in many of the Mark VIIs. (I mean, I know there are diesels and maybe some other stuff, but a Mark VII LSC def has the 5.0HO) So you've already got the 86-93 Mustang GT stuff.

Not everything works, and not everything is a direct bolt on like it would be for the Mustang. When it comes to the engine, the Mark's didn't get the H.O. 5.0 until 87, and prior to 86 they had less-than-favorable CFI motors. As long as you have a Mark VII with the 5.0 H.O there is a decent amount you can use direct from a Mustang. A lot of stuff requires modifcation, too. Also, remember that the Marks run on Speed Density, not MAF.

For the gears, the LSC came with a 3.27, others potentially had 2.73 or 3.08, and all had the option for Trac-Loc. Unless you get into a rare Diesel, those had a 3.73.
